Summer Fruits and Vegetables

The bounty of summer fruits and vegetables are so enjoyable during the summer months and we need them for their wonderful nutritional and hydrating qualities. We can eat them, drink them, and even apply them to our skin for good health and good looks.  Nature provides us just what we need, just when we need it. It’s up to us to take advantage and use what nature provides on a seasonal basis.

Here’s a list of 12 fantastic summer foods to give your body a boost of rich vitamins and minerals;

Its time to take advantage of the fruits and vegetables in season while they are plentiful and many times local. One of my favorite recipes is to take a few different types  of cooked beans, canned or fresh, some cut sweet peppers of all colors, fresh tomatoes cut up, chopped red onions, avocado, cilantro, add some a vinegar, some oil, and a dash of sugar and salt.

No measuring is needed except for 2 parts oil to 1 part vinegar. Other than that measurement, everything is just to please the eye and your taste buds.

This lasts for days in the fridge, if it lasts at all. A great take to work lunch with a few crackers.
