Sweet Potato Salad

Sweet Potato Salad


3 large or 4 medium sweet potatoes

½ large red onion, diced

1 seedless cucumber, diced

3 or 4 ears fresh corn

½ cup chopped peanuts



Juice of 2 fresh limes

3 Tablespoons olive oil

1 teaspoon dijon mustard

½ teaspoon curry

1 clove garlic, diced

salt and pepper to taste

Peel sweet potatoes and quarter them. Boil in water until mostly soft.(about 10 minutes) Microwave corn and cut off cob. Chop sweet potatoes into small chunks.  Add in cucumber, onion, corn, and peanuts.

Combine dressing ingredients and pour over potato mixture.  Store in refrigerator until chilled. This recipe becomes better with time. Much better the next day.  Also good served over mixed salad greens.
